A huge welcome to our new Executive Chef Darren Clements. Bringing 20+ years of cooking experience, perfected here in Australia and overseas to us here at The Deck Bistro, Pacific Harbour Golf & Country Club.
A local Brisbane boy beginning his career in some of Australia’s best restaurants and hotels, including the Sheraton Brisbane, Melbourne’s Oberoi Windsor Hotel, and the Sofitel, his impressive resume also tells how he honed his skills catering to 1500 people in the ball rooms at JW Marriott Romania, and then refined them further at the Australian Embassy in Turkey. Most notably, Darren has worked extensively in Arabia, a key member in the pre-opening of the 867-room Madinat Jumeirah Arabian Resort in Dubai with its 45 restaurant and bars, and was the Executive Chef for the pre-opening of the W Doha Hotel in Qatar, which boasts 445 rooms and restaurants by Jean Georges Vongrichten.
Darren describes his food style as eclectic using his classic French training, a love of Asian & Arabic flavours and tastes from his many culinary journeys around the globe.
